For Pizza ovens, I can supply a High Grade Fire Brick product which is ideal as their density helps prevent foods, such as cheeses, from penetration the surface and therefore can seriously decrease cleaning time.
This has been found by a locally owned and operated commercial Pizza company who has also started another Pizza parlor and he changed the new ovens firebricks, to the same High Grade Fire Brick as the first shop had fitted.
This was because of the cleaning savings and lack of wear after 6 years of use. (at this time of writing).
